Herbal Blue Magick custard dessert

{plant-based, caffeine-free, contains rum}

Do you believe in magic? Do you believe that there is more to life, the universe and the cosmos, and that there is indeed goodness and magic in this world (despite these confusing times and all that is happening today?)

Today, to kick-start 2021 (and as our first post for the year), we celebrate magic, plants and what it means to be living a good life with a special recipe- the Herbal Blue Magick custard.


serving size: 1

caffeine-free, plant-based, contains rum (optional)

INGREDIENTS

To make the custard:

▢ 1/2 cup (approx 180 -200ml) plantbased milk of choice (we used almond milk)

▢ 1/4 tbsp maple syrup (optional)

▢ zest of half a lemon (make sure to wash the lemon really well beforehand! Using a peeler, peel skin of half a lemon, try your best to avoid peeling off the white layer of the lemon as it would be bitter).

▢ 1 teaspoon Radiance

▢ 6 -10 blue pea flowers

▢ cornstarch

To make the base

▢ cookie/biscuit of choice ( I used vegan digestive biscuits)

▢ rum (I used Cuban rum)

INSTRUCTIONS

To make the base:

01. In your container of choice (I used a little tea cup), smash two biscuits into the base of the cup.

02. Add one-two teaspoons of rum

To make the custard filling:

01. Lightly simmer on low heat the dairy-free milk, Radiance, blue pea flowers, maple syrup, lemon zest, in a small saucepan.

02. Let it simmer lightly for 5-8 minutes, stir occasionally, and using a strainer, strain loose Radiance blend herbs, lemon peel and blue pea flowers from the herbal - blue mixture.

03. Next, add cornstarch powder, a little at a time. Using a fork or hand whisk, gently mix in the cornstarch powder into mixture.

note: Remember to add the cornstarch a little at a time to avoid clumping. This would also allow you to gage how much cornstarch to add into the mixture to reach that custard-like consistency (I generally use up to 2 -3 tablespoons).

note2: to avoid clumping, if you have extra time, you could also sift the cornstarch powder ahead of time.

04. Let the mixture simmer until it reaches a custard, jelly-like consistency.

05. Pour the rich, custard filling into the base.

06. Refrigerate for at least 2-3 hours and serve with a pot of herbal tea.

07. Enjoy with a loved one (best without your mobile phones).
